using only 2 tbsp of oil, no peanuts

Recipe Ingredients for Szechuan Chicken

1 tbsp cornstarch
3 tbsp soy sauce, low salt
10 ounces chicken breast, skinless
1 tbsp cooking sherry
2 tsp sugar
2 tbsp canola oil
1 tsp vinegar
1/2 tsp red pepper flakes
2 green onions, sliced
1/2 tsp gingerroot, minced

Recipe Directions for Szechuan Chicken

  1. Blend cornstarch and 1 tbsp soy sauce in bowl.

  2. Mix in chicken, set aside.

  3. Mix remaining 2 tbsp soy sauce, sherry, sugar, and vinegar; set aside.

  4. Heat oil in wok at 375. When hot, add red pepper flakes: stir-fry until black, 10 secs.

  5. Add chicken; stir fry 2 minutes. Remove chicken with strainer; set aside.

  6. Add green onions and gingerroot; stir fry 1 minute.

  7. Add chicken; stir-fry 2 minutes.

  8. Add sherry mixture; stir-fry 1 minute.

  9. Serve.
