The original recipe calls for half the cheese, but I like tons of cheese. Nutrition information reflects the doubled cheese.

Recipe Ingredients for Swiss Vegetable Medley

5 oz frozen broccoli
5 oz frozen carrots
5 oz frozen cauliflower
10 3/4 oz 98% fat free cream of mushroom soup
8 oz Swiss cheese
1/3 cup reduced fat sour cream
1/4 tsp ground black pepper
4 oz diced pimiento
2 4/5 oz cooked onions

Recipe Directions for Swiss Vegetable Medley

  1. Combine all ingredients, using only half of the cheese and onions.

  2. Bake at 350 for 30 minutes.

  3. Sprinkle remaining cheese and onions on top; bake 5 minutes more or until cheese is melted and onions are brown.
