From my friend Jodie a long time ago. Very tender.

Recipe Ingredients for Swiss Steak

2 lb sirloin steak, quartered and pounded
1 med onions, sliced into rings
14 1/2 oz diced tomatoes
1 can beef consomme

Recipe Directions for Swiss Steak

  1. Cut steaks into 8 portions and pound flat. Lightly flour with any seasonings you like (you don't need much).

  2. Quickly brown steaks until crispy and place in oven proof bakeware. Top with onion rings, tomatoes and then consomme.

  3. Bake at 350 for about an hour or until tender and broth reduced. Adjust ingredients as desired.
