Tender beef in stewed tomatoes and gravy.

Recipe Ingredients for Swiss steak

1 1/2 lbs. Beef (round or londonbroil)
4 cups flour
1 Salt
1 Pepper
1 1/2 large onion, diced
1/2 cup vegetable oil
60 oz. stewed tomatoes

Recipe Directions for Swiss steak

  1. Add salt and black pepper to flour as you would for breading any fired meat. Cut meat in medium size pieces.

  2. With tenderizing hammer. Beat flour mixture into meat. Cover meat with flour beat flat and cover again, fold meat over into it's self several times and beat flat, continually covering with flour and beating again. cut flattened meat patties in to pieces about 3" across.

  3. Saute onions and remove from oil.

  4. On med to high heat, fry meat until crispy and brown.

  5. Drain off oil put all ingredients in pressure cooker layering meat onions then tomatoes.

  6. Rinse each can of tomatoes and ad water to pressure cooker (about 2 cups)

  7. Pressure cook for 30-40 minutes.

  8. Serves 10-12 servings.
