Recipe Ingredients for Swiss Steak

2 lb lean beef
2 tsp kosher salt
1 tsp black pepper
3/4 cup all purpose flour
1/4 cup vegetable oil
1 large onion, minced
1 stalks celery, chopped
1 tbsp tomato paste
14 1/2 ounces diced tomatoes
1 tsp tomato paste
1 tsp smoked paprika
1 tsp dried oregano
1 tbsp worcestershire sauce
1 1/2 cups beef broth

Recipe Directions for Swiss Steak

  1. Preheat oven to 325 degrees F.

  2. Cut the meant with grain into 1/2" slices; season both sides with salt/pepper. Dredge meat on both sides; tenderize with needling device to 1/4" thickness. Dredge once more and set aside.

  3. Add oil to 4-5 qt dutch oven; over med.-high heat. When oil shimmers, add steaks to pan (don't overcrowd)--until golden on both sides (about 2 min. per side)

  4. Set browned steaks aside.

  5. Add to pot: onions, garlic and celery; saute for 1-2 minutes. Add the tomato paste; stir to combine. Add the tomatoes, paprika, oregano worcestershire sauce and beef broth and stir to combine. Submerge the browned meat into the liquid.

  6. Cover the pot and place in the oven on middle rack. Cook for 1 1/2 to 2 hours or until meat is tender.
