Recipe Ingredients for Swiss Steak

3 tbsp flour
1 tsp dry mustard
1/2 tsp salt
1 1/2 lb Tender Beef Chuck Steak
2 tbsp vegetable oil
16 oz whole tomatoes
2 cloves garlic
1 cup water
1 large onion
1 large green pepper

Recipe Directions for Swiss Steak

  1. Mix flour mustard and salt.

  2. Sprinkle 1 side of beef steak with half of the flour mixture: pound in.

  3. Turn beef and pound in remaining flour mixture.

  4. Cut beef into six pieces.

  5. Heat oil in 10-inch skillet until hot.

  6. Cook beef over medium heat until brown, about 15 min.

  7. Add tomatoes (with liquid) and garlic (chopped finely); break up tomatoes with fork.

  8. Heat to boiling: reduce heat.

  9. Cover and simmer until beef is tender, about 1 hour.

  10. Add water, onion (sliced) and green pepper (sliced).

  11. Heat to boiling; reduce heat.

  12. Cover and simmer until vegetables are tender, 5 to 8 minutes.
