Swiss Steak Piperade Recipe

A simple but delicious dinner recipe. Prep time is only about 15-20 minutes. Total cook time about 2 hours.

Recipe Ingredients for Swiss Steak Piperade

1 3/4 lbs. Bottom Round steaks
1 tbsp. olive oil
1/2 tsp dried thyme
1 large onion
1 jalapeno pepper
4 medium tomatoes
1 green bell pepper
1 lb cooked pasta

Recipe Directions for Swiss Steak Piperade

  1. Preheat oven to 325 F.

  2. Heat oil in stockpot over medium heat until hot; brown beef steaks.

  3. Meanwhile: chop onions and tomatoes, slice jalapenos thinly and cut pepper into 1 inch pieces.

  4. Sprinkle steaks with thyme (salt and pepper if desired); top with onion and jalapeno peppers. Add 1/4 cup water; bring to a boil. Cover tightly and cook in oven at 325 F for 45 minutes.

  5. Add tomatoes and bell peppers. Cook, covered, 30-45 minutes or until beef is fork tender.

  6. While the sauce cooks fill a 4-5 quart pot with water and boil. Right before you remove the steaks (next step) put your favorite pasta (I like bowtie for this recipe) in the water to cook. Follow the directions for al dente on the box.

  7. Remove steaks. Cook and stir sauce over high heat 8-10 minutes or until slightly thickened. Cut steaks into serving size pieces; add to sauce. Serve over pasta.
