Recipe Ingredients for Swiss Potato and Cheese Soup

21 1/2 oz. chicken broth
10 3/4 oz. beef broth
3 cups water
1 large onion
4 large potatoes, peeled and diced
2 cups sliced celery
8 mushrooms, sliced
0.33 cup butter
0.33 cup flour
6 oz. Emmenthaler cheese, shredded
1 tsp. salt
1/2 tsp. pepper

Recipe Directions for Swiss Potato and Cheese Soup

In a kettle combine broths, water, onion, potatoes, celery and mushrooms. Cover and simmer 30 minutes or until potatoes are tender. In a small skillet, melt butter and stir in flour. Stir constantly over med. heat until mixture becomes golden brown. Add to simmering soup, stir until soup bubbles and thickens. Season with salt and pepper. Spoon into bowls and sprinkle with cheese.
