This is a wonderful dish for picnics and pot luck as it is served cold. The original recipe called for 1/2 cup olive oil, and if your fat count allows it - go for it. Therecipe also calls for 1/2 tsp salt - add if you must.

Recipe Ingredients for Swiss Green Beans

1 1/2 lb green beans
5 tbsp lemon juice
2 cloves garlic, crushed
4 tbsp olive oil
1 tbsp red wine vinegar
1/2 tsp dried tarragon, crushed
2 tsp dijon mustard
1/2 cup parsley, fresh, minced
1/3 lb Cheese, Swiss, light
1/2 cup ripe olives, chopped
1/2 cup red pepper, thinly scliced
1/2 cup green pepper, thinly sliced
1/2 cup almonds, chopped, toasted

Recipe Directions for Swiss Green Beans

  1. Steam the whole beans until just tender. Remove from heat and immediately rinse in cold water.

  2. While beans are cooking, combine the dressing ingredients,(lemon juice - Parsley) in a large bowl` Mix well to combine.

  3. Add the well drained beans to the dressing. Add the Swiss cheese, cut in strips. Toss until dressing is well distributed. Cover tightly, marinate at least 2-3 hours, stirring about once an hour.

  4. Add olives and sliced peppers. Mix well and chill overnight or at least 5 hours(if you are short on time as I often am when you read this recipe - marinate and let sit as long as you can, even with no time otheer than for assembly it tastes great. It just tastes better if you can let it sit).

  5. Serve topped with almonds
