Baked Chicken Breast with Swiss Cheese

Recipe Ingredients for Swiss Dijon Chicken Rolls

1 pound boneless, skinless chicken breast halves
3/4 cup cheese (swiss)
6 tablespoons skim milk
4 tablespoons Dijon mustard
3/4 cup bread crumbs
4 tablespoons grated Parmesan cheese
2 teaspoons dried tarragon
1 Freshly ground pepper

Recipe Directions for Swiss Dijon Chicken Rolls

  1. Preheat oven to 375. Lightly coat an 8 x 8 baking dish with no-stick spray.

  2. Flatten breasts with a mallot to 1/4"

  3. Place equal amounts of swiss cheese in the center of each breast and set aside.

  4. In a small bown or pan, mix the milk and mustard. Set aside.

  5. In a medium bowl or pan, mix the bread crumbs, Parmesian cheese, tarragon and pepper to taste.

  6. Roll up each breast, beginning with the smaller end. Dip each roll inot the milk mixture and then into the bread crumb mixture to coat completely. Place in the baking pan with the rolled end down. Cover and bake for 30 minutes. Uncover and bake for 15 minutes more or until golden brown.
