The original recipe (from FitnessRX magazine) called for 8 oz soy sausage for a 2 serving dish. I couldn't find any appetizing soy sausage, so I substitued turkey bacon (which took a lot of tries to get the recipe analyzer to recognize). I doubled the recipe because I'm cooking for four, but I didn't double the amount of meat. 16 ounces of meat -- even lean turkey meat -- seems a little excessive. [note: When I made it, I threw in some diced onion as well. I also ended up using beet greens and turnip greens because the chard wilted to almost nothing]

Recipe Ingredients for Swiss Chard Torta

2 tbsp lemon juice
1/2 cup water
24 leaves swiss chard
6 small potatoes, thinly sliced
4 large eggs, beaten
8 oz turkey, bacon, cooked and diced

Recipe Directions for Swiss Chard Torta

  1. Place lemon juice and water in a microwave-safe dish with a lid. Add the Swiss chard and steam, covered, in the microwave on high for 3 minutes, or until the chard wilts. Coat the potatoes with beaten eggs. Layer a baking dish with 1 layer of Swiss chard, followed by the potatoes and turkey bacon. Add a sprinkly of salt and pepper. Continue layering until all the ingredients are used up. The top layer can be either turkey bacon or potato, but not Swiss chard.

  2. Bake for 30 - 40 minutes at 375 degrees, or until the potatoes are tender.
