By Victoria333 A variation on my asparagus soup served cool or warm for summer or winter months.

Recipe Ingredients for Swiss Chard Soup, Victoria's Without Cream_ Raw

8 cups Swiss Chard
2 medium Onion
4 cloves Garlic
4 stalks Celery
1 cup Chicken Broth or Vegetable Broth
1 tablespoon olive oil
1 Salt to taste
1 Pepper to taste

Recipe Directions for Swiss Chard Soup, Victoria's Without Cream_ Raw

  1. Wash Swiss Chard thoroughly. Mince onions, celery and garlic.

  2. Sauté Swiss Chard in +-1/2 cup water until al dente. Save the water for the soup.

  3. Sauté onions, celery and garlic in olive oil and when almost finished add +-1 cup stock; continue to cook until onions are clear.

  4. Puree in blender Swiss Chard with a little stock or Swiss Chard water. Add all the other ingredients, including salt and pepper to taste, and blend on high for several minutes. Dish and place a few halves of cheery tomatoes for garnish.

  5. As a side dish around the soup; roll basil leaves around cherry tomatoes and goat cheese or feta spread on basil leaf.
