Recipe Ingredients for Swiss Chard with Olive Oil, Lemon Juice & Mushroom

1 lbs chard
2 tbsp olive oil
1 pinch salt
3 garlic cloves
1/2 tsp lemon juice
2 mushrooms

Recipe Directions for Swiss Chard with Olive Oil, Lemon Juice & Mushroom

  1. Wash greens and keep wet

  2. Peel garlic cloves & retrieve garlic press.

  3. Dice mushrooms & set to cook slowly under low heat in small covered frying or saucepan with a dash of oil

  4. Trim bottom of stems, cut leaves from stems, then cut stems into 2-inch lengths

  5. In large covered pot, steam stems for 5 min, then add leaves and steam some more until floppy & soggy.

  6. add olive and salt to another large pot and place on medium to low heat

  7. transfer steamed chard to this new pot, stir, add garlic (from garlic press), stir again.

  8. cook covered over low heat, stirring occasionally, until tender

  9. Transfer to serving dish, add cooked mushrooms & sprinkle with lemon juice, then stir.

  10. Can be served lukewarm -

  11. Note: using 2 pots allows you to do several batches more efficiently --- raw leaves may not all fit at once.
