Can use any greens, but this is what I had growing in the garden

Recipe Ingredients for Swiss Chard & Mushroom Frittata

194 grams onion, cooked
3 egg whites, jumbo
5 eggs, whole, raw
4 cloves garlic, sliced
285 grams mushrooms, sliced
360 grams Swiss chard, chopped
4 ounce (Natural Shredded cheese), 2% reduced milk fat mild cheddar
1/2 cup chicken stock, fat free
1/2 teaspoon pepper

Recipe Directions for Swiss Chard & Mushroom Frittata

  1. Preheat the oven to 375.

  2. Beat eggs and set aside in a large bowl.

  3. Saute the onion, garlic, and mushrooms until very soft in chicken stock, remove from pan and drain.

  4. With remaining stock add greens and steam until reduced in size.

  5. Add all ingredients to eggs.

  6. Pour mixture into a 8 x 13 pan. Bake for 30 to 35 minutes until lightly browned.
