Recipe Ingredients for Swiss Chard and Feta Frittata

2 tbsp olive oil
3 garlic cloves, thinly slicesd
12 oz swiss chard, coarsely chopped
1 tsp kosher salt
4 eggs
2 egg whites
1 black pepper, to taste
2 oz crumbled feta cheese

Recipe Directions for Swiss Chard and Feta Frittata

  1. Preheat oven to 400 degrees F, 200 degrees C.

  2. Heat 1 tbsp of the olive oil in a 10 inch oven proof skillet over medium heat.

  3. Add the garlic and cook until soft and fragrant, about 45 seconds.

  4. Add the chard and sprinkle it with the salt.

  5. Cover the pan and cook the chard, stirring often, until tender, about 6 minutes.

  6. Meanwhile, beat together the eggs and the egg whites.

  7. Season to taste with the black pepper.

  8. Drizzle the remaining tablespoon of olive oil into the skillet, then add the eggs.

  9. After about 1 minute, as the eggs begin to set, push and lift the edges of the frittata with a spatula and tilt the pan to allow the uncooked egg to run into the hot pan.

  10. Continue cooking the frittata in this manner until the surface is no longer runny but is still wet, about 3 minutes.

  11. Scatter the cheese over the frittata. Transfer the skillet to the oven and cook until the cheese softens slightly and the surface of the frittata is dry, about 3 minutes. Slide the frittata onto a plate and slice it into wedges.

  12. Serve hot or a room temperature.
