Lentils & Swiss Chard...oh my!

Recipe Ingredients for Swiss Chard Daal

2 cups swiss chard, chopped
1 cup red lentils
1 cup white mushrooms, chopped
2 medium carrots, chopped
1 white onion, chopped
5 cloves garlic, minced
1/2 tomato, chopped
1 tbsp curry powder
1 tsp cumin
1 1/2 tbsp canola oil
1 tsp coriander
2 tsp turmeric

Recipe Directions for Swiss Chard Daal

  1. Cook the turmeric and lentils in 2.5 cups of water for about 20 minutes or until tender. Blend til smooth and set aside.

  2. Heat the oil in a non stick wok. Add the garlic, onion and spices and cook til the onions are transparent. Add the carrots, mushrooms and tomato (throw in any veggies you have around - also a can of diced tomatoes would be delicious as well). Add a little water now and then to keep things cooking and not sticking. When the carrots are tender, add the swiss chard (make sure there is some liquid in the pan - if there isn't add a little more water) and cover. Simmer for about 5 minutes or until the greens are wilted.

  3. Add the cooked and blended lentils to the veggies, stir, and simmer for about 10 minutes or so.

  4. Voila! Super easy and yummy greens.
