8 oz egg whites
1 pound sugar
20 4/5 oz butter

Recipe Directions for Swiss Buttercream

  1. Over a double boiler, warm whites and sugar to 120*f (or until sugar is dissolved completely)

  2. In a mixer fitted with a whip, whip egg whites and sugar to a stiff peak

  3. Continue whipping until meringue is cool.

  4. Add butter gradually and whip until smooth (buttercream may break and come back together in the process)
