A sweet and hot carrot soup that can be eaten in the cold of the winter or in the sun in the summer. Makes about 6 (though sometimes it's enough for 8 people, all depends on how much you eat of course)

Recipe Ingredients for Sweet'n' Hot Carrot Soup with Orange Juice

500 grams Carrots
250 grams Potato, Flesh And Skin
3 serving Vegetable Stock
1000 grams Orange Juice
1 Peppers, Hot Chili, Red
1000 grams Water

Recipe Directions for Sweet'n' Hot Carrot Soup with Orange Juice

  1. Peel and dice the carrots and potatos. Slice the chili along the middle and get rid of the seeds (or keep them if you want a hotter soup)

  2. then slice the chili into smaller pieces.

  3. Heat oil in a saucepan over medium heat. Add the stock, carrots, potatoes and chili adnf fry for a couple of minutes.

  4. Add about 1 liter of water. Cover and let simmer until the carrots and potatoes are soft, about 20 minutes.

  5. Then pour the soup in a blender or just use a stick blender. Return the soup to the same pan you used before. Mix in the orange juice after taste (I use 3 dl to 1l depending on mood and how I want it). Season after taste with salt and pepper. Let it simmer for a couple of more minutes.
