Exactly what it says on the tin. A nice brunch. Very good with poached eggs or baked beans. For veggies, or a lower kcal choice, replace bacon with sweetcorn.

Recipe Ingredients for Sweetcorn, Cheese and Parsley Hotcakes

50 grams Sweetcorn
50 grams Self Raising Flour
25 grams Cheddar Cheese
1 tbsp Parsley
1 medium Egg, Whole
45 grams Milk, Reduced Fat, Fluid, 2% Milkfat

Recipe Directions for Sweetcorn, Cheese and Parsley Hotcakes

  1. Mix together dry ingredients, add wet. Then add sweetcorn.

  2. Cooking spray your pan, then drop spoonfulls into it. Cook till set around the edges. Flip. Cook till golden.
