Boiled rice mixed with veg and fruit, served cold with an egg white omeltte.

Recipe Ingredients for Sweet Veggie Rice Salad

100 grams White Basmati Rice
4 large Egg, White
2 1tsp Vegetable Oil, Coconut
170 grams Squash, Summer, Zucchini, Includes Skin
200 grams Tomato Roma
100 grams White Button Mushrooms Packaged
1 medium raw Onion Red
20 grams Apricots, Dried, Sulfured, Uncooked
40 grams Peppers, Sweet, Green
1 cloves, raw Garlic
0.5 fruit (2-1/8" dia) Lemons
10 grams Sage

Recipe Directions for Sweet Veggie Rice Salad

  1. Cook of the rice and leave to chill.

  2. Chop up all the veg and fruit and fry in a pan with the coco oil.

  3. Mix the veg and fruit mix through the rice and squeeze some lemon juice over the top.

  4. Dry fry 10 or 20 sage leaves in a pan.

  5. Whisk up the egg whites and fry in a pan to make an omelette.

  6. Serve everything on a plate and sprinkle the sage leaves over the top. Enjoy
