Prep = 15 min + Time to marinate or chill; Cook = 40 min Sweet chili sauce, also called Mae Ploy, is a wonderful Thai condiment that hits all the right flavor notes--sweet, spicy (but not too spicy), and sour. The combination of the Asian ingredients along with the fresh garlic and ginger in the sauce make the house smell wonderful all day long. Serve it with steamed rice and peas. Scramble Flavor Booster: Use the optional red pepper flakes. TIP: To skin chicken with ease, peel off a little part of the skin to start with and hold the skin tightly with a paper towel. The skin latches on to the paper towel to make peeling it off easier. (I was astounded to discover that keeping the skin on the chicken instead of removing it adds 200 calories and 23 grams of fat per serving!) SERVE WITH STEAMED RICE AND PEAS To make steamed rice and peas, cook 1 1/2 cups quick-cooking brown rice or regular white rice according to the package directions. Mix 1 cup frozen peas and a few shakes of salt or soy sauce into the rice while it is still hot, stir and cover it for a minute or two so the peas thaw. Recipe Ingredients for Sweet Thai Chili Chicken

1 cup sweet chili sauce
1 cup reduced-sodium soy sauce
1 tbsp. honey
1 tbsp. fresh ginger, peeled and minced
1 tsp. minced garlic, (about 2 cloves)
1 tsp. crushed red pepper flakes (optional)
1 lbs. chicken
1 carrots, sliced
1 yellow onion, halved and sliced

  1. In a microwave-safe bowl, combine the first 6 ingredients (Asian sweet chili sauce through the optional crushed red

  2. pepper flakes). Heat them in the microwave for 1 - 2 minutes until they are hot, and stir. (Alternatively, heat the

  3. sauce for a few minutes in a small saucepan on the stovetop over medium heat.)

  4. Put the chicken in a single layer in a large baking dish, and pour the sauce over it. Flip the chicken a couple of times to

  5. coat it, and marinate it, covered, for at least 4 hours and up to 24 hours, flipping it once or twice.

  6. Preheat the oven to 400 degrees and remove the chicken from the refrigerator. Add the carrots and onions to the pan,

  7. and bake the chicken for about 40 minutes, flipping it once, until it is cooked through. (Meanwhile, make the rice and

  8. peas, if you are serving them.) Serve it immediately or refrigerate it for up to 2 days, or freeze it for up to 3 months.
