Recipe Ingredients for Sweet Taters Veggie Wrap

1 T Olive Oil
1 cup sliced onions (saute')
1 cup kidney beans
1 large sweet potato, peeled and cut into 1/4 inch cubes
3 cups fresh spinach leaves (optional)
4 whole wheat tortillas

Recipe Directions for Sweet Taters Veggie Wrap

  1. Steam fresh sweet potatoes until tender or drain canned well, cut into large cubes

  2. Heat oil in skillet. Add onion and saute' Cook 8 minutes or until translucient and lightly browned. Add a bit of water if it gets too dry. Add beans,Add sweet potatoes . Cook 1-2 minutes more.

  3. Divide filling onto 4 tortillas
