An Asian recipe with rice pasta, plenty of veggies, and tempeh. I made it gluten free (just read the labels on the sauces!).

Recipe Ingredients for Sweet and Spicy Tempeh Stir Fry-- GF

1 large squash
1 medium carrot
1 large onion
1 yellow pepper
3 tbsp corn oil
1 clove garlic
3 oz rice vermicelli
1/2 tsp garlic powder
1 1/2 tsp ginger
1/4 tsp cayenne powder
1/4 tsp pepper, balck
1/8 tsp parsley, dried
1/8 tsp curry powder
1 1/2 tbsp dark mushroom soy sauce
1 tbsp lite soy sauce
1/4 cup rice vinegar
1/2 tsp lemon juice
1 serving (1 tsp) Asian chili sauce
2 tbsp plum sauce
2 tbsp corn starch
8 oz soy tempeh

Recipe Directions for Sweet and Spicy Tempeh Stir Fry-- GF

  1. Shred/grate/ matchstick all veggies.

  2. Heat oil on medium heat in a wok.

  3. Dice tempeh. Add to wok with garlic.

  4. Brown tempeh on all sides with oil.

  5. Add all veggies and a dash of mushroom soy sauce.

  6. Cook on medium heat, stirring often.

  7. Meanwhile, boil water.

  8. Add pasta to water and boil for 15 minutes.

  9. Drain pasta and rinse with cold water.

  10. Move veggies and tempeh to sides of wok.

  11. Add pasta to middle of wok with a small dash of each oil and soy sauce.

  12. Cook on medium until slightly golden.

  13. Meanwhile, wisk remaining ingredients together to make a sauce.

  14. Bring to simmer, then lower heat to low.

  15. Mix well; sauce with be dark brown and thick, covering veggies and tempeh.

  16. Mix pasta with veggies, drizzle sauce over all.
