Recipe Ingredients for Sweet and Spicy Pork Tenderloin With Spinach Pear Salad

1 1/2 lb. pork tenderloin
1/4 cup low sodium soy sauce
1/2 tsp fresh grated ginger
1/4 tsp. salt
4 cloves garlic
1/2 cup orange juice
1 tbsp. fresh chopped parsley
2 tbsp. olive oil
1 tsp. black pepper
5 oz. spinach
2 oz. blue cheese
1/4 cup sliced red onion
1 cup diced Bartlett pears
1/4 cup chopped walnuts
1/2 cup orange juice
1 tbsp. honey
1 tbsp. olive oil
2 cloves garlic, minced
1 1/2 cups wild rice

Recipe Directions for Sweet and Spicy Pork Tenderloin With Spinach Pear Salad

  1. Place tenderloin in a gallon size Ziploc bag. Whisk together all other ingredients. Pour this mixture over the tenderloin. Seal the bag and let marinade in the refrigerator for 1 to 2 hours. Remove tenderloin from the bag and place it in a baking dish. Pour marinade over the pork loin. Bake in a 400 degree oven for 15 minutes. Place a lid on the casserole dish and lower the heat to 350. Bake for an additional 45 minutes or until the center of the tenderloin reaches 160 degrees. Cook wild rice according to directions. Slice up the tenderloin and serve it over wild rice.

  2. Cut spinach to bite size pieces and place in your salad bowl. Add pears, red onion, blue cheese, and walnuts. Whisk together orange juice, honey, olive oil, and garlic. Pour dressing over the salad. Toss and serve.
