I found this recipe from the ADA. The sodium is higher on here for some reason than in the original recipe. The original recipe calls for 1/4 cup lite soy sauce. I reduced the amount of the soy sauce because the sodium ended up being in the 900's. My recipe calls for 2.5 tablespoons to get the sodium similar to the recipe from the ADA. Any ideas why?

Recipe Ingredients for Sweet and Spicy Chicken and Snow Peas

16 oz Chicken
1/2 cup, sliced Peppers, Sweet, Red
1/2 slice, thin Onions
1 cup Ready Fixin's Shredded Carrots
6 oz Frozen Snow Peas
2 serving Apple Cider Vinegar
6 tsp Sugars, Granulated
1/8 teaspoon crushed red pepper
1 tbsp. sesame seeds
2 1/2 tablespoons lite soy sauce

Recipe Directions for Sweet and Spicy Chicken and Snow Peas

  1. Place a large skillet over medium high heat until hot. Coat the skillet with cooking spray and add chicken. Cook for two minutes or until center is no longer pink. Stir constantly and set aside.

  2. Re-coat the skillet with cooking spray. Add the peppers, onions and carrots. Coat vegetables with cooking spray and cook for three minutes stirring occasionally. Add snow peas and coat with cooking spray. Cook two minutes or until tender crisp. Add the chicken and toss.

  3. Combine the remaining ingredients, except the sesame seeds, in a small bowl.

  4. Serve equal amounts in small shallow bowls. Spoon equal amounts of the soy mixture over each serving and sprinkle with sesame seeds.
