Great for black beans and rice bowl or burritos

Recipe Ingredients for Sweet and Spicy Black Beans

2 tsp olive oil
1/2 medium onion, finely chopped
1 clove garlic, minced
1 jalapeno pepper, finely chopped
26 1/2 ounce canned black beans, rinsed and drained
14 1/2 ounce canned diced tomatoes, italian style, drained
2 tbsp honey
2 tbsp splenda brown sugar blend
1/2 tsp ground ginger

Recipe Directions for Sweet and Spicy Black Beans

  1. Heat olive oil in 3-4 quart soup pot over medium high heat. Add onion, stir. Cook onions for about 20-25 minutes until cooked down to half amount over low to medium heat. Stir frequently so doesn't burn.

  2. While onions are cooking, chop jalapeno & garlic and set aside. Drain & rinse black beans.

  3. When onions are cooked to half amount add garlic, jalapenos. Cook 5minutes.

  4. Add beans, tomatoes, brown sugar, honey, ginger to onion mixture. Stir well. Heat over medium heat until hot.
