Healthy, fresh, crunchy salad that can be a side dish or main entree

Recipe Ingredients for Sweet and Spicy Black Bean Salad

29 oz. black beans
1 red bell pepper, chopped
1 cup cilantro, chopped
1 cup celery, chopped
2 jalapeno peppers, chopped
1 1/2 cups corn
1/4 cup canola oil
1/4 cup lime juice
2 tbsp brown sugar
1 tbsp dijon mustard
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Sweet and Spicy Black Bean Salad

Combine first 6 ingredients and mix well. Combine the remaining dressing ingredients and pour over top of vegetables, mixing well. Chill one hour, minimum or make ahead 1-2 days.
