Tunisian. Breakfast meal or nice light dessert. Sweetened naturally with fruit juice and dried dates.

Recipe Ingredients for Sweet Spiced Couscous

1/4 c raw cashews, chopped
1/4 c almonds, slivered, blanched
2 tbsp hazelnuts, chopped
1 1/2 c apple juice
1 1/2 c whole-wheat couscous
3/4 c pitted dates
1 c soy milk

Recipe Directions for Sweet Spiced Couscous

  1. Place nuts in a large nonstick skillet over medium high heat and cook 3-4 minutes, stirring frequently until they begin to lightly brown. Remove from heat.

  2. Place apple juice in a small saucepan and bring to a boil. Stir in couscous and cook 1 minute. Remove from heat and let stand five minutes. Stir in oil, dates, and nuts. Spoon into bowls and serve with a splash of soy milk, if desired.
