Delicious Polynesean style dish. Serve with rice.

Recipe Ingredients for Sweet and SourChicken

1/4 cup packed brown sugar
1/4 cup rice vinegar
2 tbsp soya sauce
1 tbsp Oriental sesame oil
1 lb boneless chicken, cut into cubes
1 tbsp vegetable oil
4 tsp cornstarch
2 cloves garlic, minced
1 tbsp minced ginger root
1 red bell pepper, sliced
1 cup snow peas or sugar snap peas
1 cup sliced celery
1/4 tsp hot pepper flakes

Recipe Directions for Sweet and SourChicken

  1. In a medium bowl, stir together the brown sugar, rice venegar, soya sauce and sesame oil. Add chicken and toss to coat; let stand for 10 minutes while preparing the vegetables.

  2. Drain the marinade into a small bowl and whisk in pineapple juice and cornstarch; set aside.

  3. In a large wok or skillet, heat the oil over high heat. Add garlic and ginger; stir-fry for 30 seconds or until fragrant. Add chicken; stir-fry for 2 minutes. Add red pepper and stir-fry for 3 minutes, or until chicken pieces are cooked through.

  4. Add peas, celery, pineapple and hot pepper flakes. Stir cornstarch mixture to recombine. Add to the skillet and stir for 2 - 5 minutes.
