Sweet and Sour Tofu Recipe

Recipe Ingredients for Sweet and sour tofu

1/4 cup rice vinegar
2 tablespoon soy sauce
2 tablespoon corn starch
2 tablespoon apricot preserves
2 tablespoons canola oil
1 pound firm tofu
4 cloves garlic
2 teaspoons grated ginger
1 cup vegetable broth
1 cup chopped carrots
1 cup chopped bell pepper
1 cup chopped mushrooms
1 cup snap peas
2 cups chopped bok choy
4 ounces water chestnuts

Recipe Directions for Sweet and sour tofu

  1. whisk together vinegar, cornstarch,m soy sauce, and preserves. Set aside

  2. Heat 1 tablespoon oil and cook tofu for 2-4 minutes. Remove from pan

  3. Heat 1 tablespoon oil and cook ginger and garlic for about 30 seconds. Add broth, bring to boil.

  4. Then add 6 cups veggies and cook 4-6 minutes (til tender crisp) Reduce heat and simmer for this step.

  5. Add back tofu and chestnuts.

  6. Whisk sauce and add

  7. Cook nother few minutes, until sauce thickens and tofu is heated through

  8. Serve over 1/2 cup cooked brown rice
