Sweet and Sour Tofu Recipe

An imitation of the sweet and sour tofu my mom made when I was a kid.

Recipe Ingredients for Sweet and Sour Tofu

1 1/2 cups brown rice
1 pound firm tofu
1/4 cup unsweetened pineapple juice
2 tablespoons fresh lemon juice
2 tablespoons ketchup
2 tablespoons brown sugar
2 tablespoons tamari
1 tablespoon dark sesame oil
2 1/4 teaspoons cornstarch
2 1/2 teaspoons grated fresh ginger root
2 tablespoons vegetable oil
1 onion, thinly sliced
1 carrots, sliced diagonally
1 large chopped red bell pepper
1 cup pineapple chunks
2 tbs peanut oil
2 tbs flour

Recipe Directions for Sweet and Sour Tofu

  1. Press the water out of the tofu by wrapping it in a dish toil and putting it in between two heavy plates or cutting boards for about 30 minutes, then cut it into cubes.

  2. Dredge the tofu in a mixture of cornstarch and flour seasoned with salt and pepper. You can also dredge it in cornstarch, then in egg and then in flour, which forms a thicker batter. As a third option you can skip the battering altogether, which will reduce the calories.

  3. Brown the tofu cubes on all sides in a pan of 2 tbs vegetable 2 tbs peanut oil heated on medium to medium-high heat. As always with frying make sure your oil is heated properly and you don't overcrowd the pan. If the oil is too low the tofu will absorb it and become gross.

  4. Drain the tofu cubes on paper towels and set aside.

  5. Make a sauce by combining the lemon juice, pineapple juice, brown sugar, ketchup, tamari, sesame oil, cornstarch and ginger. Blend well. If desired add a little rice vinegar, salt or pepper to taste.

  6. Stir fry the peppers, carrots and onion in a non-stick wok or large skillet until they are crisp-tender.

  7. Add the sauce and bring it to a boil. Simmer until it thickens and then add the tofu and heat through.

  8. Serve over brown rice!
