A healthy twist on the chinese food dish. I had no pineapple, so I substituted mango. If you have a can of pineapple juice, add it to the sauce with juice and take out the orange juice from the recipe.

Recipe Ingredients for Sweet and Sour Stir-fried Chicken with Mango

1 cup uncooked rice
10 oz chicken breasts
1 large red pepper
1/2 onion
1/4 cup ketchup
3 tbsp sugar
1/4 cup apple cider vinegar
1/2 tsp soy sauce
2 tsp cornstarch
1 tbsp orange juice
1 mango
1 cup water

Recipe Directions for Sweet and Sour Stir-fried Chicken with Mango

  1. Defrost Chicken. Cook on medium until pink is gone.

  2. Add onion and red pepper cut into bite sized cubes.

  3. In a separate pot, prepare rice as per instructions on the bag.

  4. In another pot, add water, ketchup, apple cider vinegar, soy sauce, orange juice, mango and sugar. Stir and bring to a boil.

  5. Cook vegetables with chicken until tender. Add the sauce from the pot to the chicken in the frying pan.

  6. In a cup, stir cornstarch in w 1/4 cup of water. Add slowly to the frying pan while stirring. This will thicken up the mixture.

  7. Serve over your rice.
