Recipe Ingredients for Sweet and Sour Shrimp

8 ounce pineapple chunks
1/3 cup teriyaki sauce
2 tablespoons rice vinegar
2 tablespoons peanut butter
2 tablespoons cornstarch
1 tablespoons canola oil
16 ounce frozen mixed vegetables
1 teaspoon ginger, minced
1 lb shrimp, thawed and shelled
2 cups brown rice, cooked

Recipe Directions for Sweet and Sour Shrimp

  1. Drain juice from pineapple chunks into a bowl, set aside chunks.

  2. To pineapple juice add 1/3 cup water, teriyaki sauce, rice vinegar, peanut butter and cornstarch. Whisk until blended; set aside.

  3. Heat canola oil in a large nonstick skillet over high heat. Add mixed vegetables and ginger. Stir fy for 3 minutes.

  4. Add pineapple chunks and shrimp; cook, sitting 1-2 minutes.

  5. Rewisk pineapple juice mixture; add to skillet. Bring to a simmer, stirring.

  6. Reduce heat and continue cooking, stirring gently, until mixture thickens slightly, about 2 minutes.

  7. Serve over rice.
