Recipe Ingredients for Sweet and Sour Shrimp

1 pound shrimp, shelled and deveined
1 T cornstarch
1/4 t salt
2 t sesame oil
1 1/2 cup green pepper, sliced
1 1/2 cup onion, sliced
2 cloves garlic
1/2 cup canned pineapple tidbits
1/4 cup sweet and sour sauce
1/4 cup chicken stock or water

Recipe Directions for Sweet and Sour Shrimp

  1. Place cornstarch and salt in a large zipper bag. Pat shrimp dry and add to the bag.

  2. Toss the shrimp to coat in the cornstarch mixture.

  3. Heat 1 t sesame oil in a large skillet over medium heat. Add the shrimp in a single layer and allow to cook for about 4 minutes until lightly browned and shrimp are beggining to curl up and turn pink.

  4. Flip the shrimp and allow to lightly brown on the other side.

  5. Place the shrimp aside on a plate.

  6. Heat the other 1 t of sesame oil in the pan, and add the green pepper, onion, and garlic.

  7. Saute the vegetables for 2-3 minutes, then add the chicken stock, cover, and allow to steam for 4 minutes.

  8. Return the shrimp to the pan to reheat for a minute or two.

  9. Remove the shrimp and vegetables to a large bowl, include any stock if there is still any in the pan, and add the sweet and sour sauce.

  10. Mix to combine thoroughly, and serve.
