This tasty recipe makes a meal in one pan. It is easy to make and clean up. You will be hunger free and feeling good when you are done.

Recipe Ingredients for Sweet and Sour Shrimp Casserole

1 lb raw prawns, shelled and cleaned
1 cup dry brown rice
1 onion, diced
2 carrots, sliced
8 oz mushrooms, sliced
1 cup celery, chopped
20 oz pineapple chunks, water packed
1 bell pepper, cubed
1 cup vegetable broth, low sodium
2 tbsp balsamic vinegar
1 tsp garlic, minced
1 tbsp tamari, low sodium
4 cups raw spinach

Recipe Directions for Sweet and Sour Shrimp Casserole

  1. In a large skillet, saute the onion, mushrooms, carrots and celery in 2 tbsp of the vegetable broth until the onions are just softening.

  2. Stir in the rice and garlic. Cook over medium heat for about three minutes. Stir frequently so nothing sticks or burns.

  3. Open the pineapple can and pour the juice into a measuring cup. Add enough of the remaining vegetable broth to make 2 cups of liquid. Pour the liquid into the rice and veggie mixture in the skillet.

  4. Bring to a boil, reduce heat to low, cover and simmer 30 minutes.

  5. Check the rice for doneness. Add the tamari and the balsamic vinegar and stir. If there is still liquid visible in the pan you will need to cover again and simmer longer after stirring it.

  6. Once the rice is done and the liquid has been absorbed, add the shrimp, pineapple bell pepper and spinach. Stir them in and allow it to simmer covered again for only three to four minutes. The shrimp should be pink, the spinach wilted, the pineapple heated through and the bell pepper still crisp but hot.
