A take on what was supposed to be a low calorie asparagus recipe, but it had honey and three times the apple juice. I've cut down the apple juice, eliminated the honey, added mustard and garlic for a much healthier recipe. Unfortunately, it still logs simple sugars.

Recipe Ingredients for Sweet-sour Roasted Asparagus

1 lb asparagus
1 teaspoon olive oil
1 teaspoon apple juice
2 teaspoons water
1 teaspoon lemon juice
2 teaspoons Splenda
1 teaspoon mustard
1 teaspoon garlic

Recipe Directions for Sweet-sour Roasted Asparagus

  1. Preheat oven to 350F.

  2. Trim asparagus, and you can either leave in whole stalks or break down into more bite-size pieces.

  3. Mix together remaining ingredients well.

  4. Toss asparagus to coat.

  5. Put onto a cookie sheet and spread out for most even roasting.

  6. Roast for 10-12 minutes, or until to desired doneness.
