Sweet & Sour stir-fry over rice made with vegetables on hand. Can substitute for any stir fry vegetables you want (I would have added bell peppers if I had any on hand).

Recipe Ingredients for Sweet & Sour Pork with Rice

1 lb pork
1 tbsp vegetable oil
1 tbsp low sodium soy sauce
1/4 cup La Choy sweet & sour sauce
1 cup pineapple chunks in juice
1 cup Broccoli, Cauliflower, Carrot frozen medley
1 cup raw brown rice

Recipe Directions for Sweet & Sour Pork with Rice

  1. Cook 1 cup rice in rice cooker (if you don't have rice cooker cook according to package directions).

  2. Meanwhile, add oil in skillet and brown pork (cut into chunks or strips).

  3. Add soy sauce, pineapple chunks and juice, and sweet & sour sauce. You may add vegetables at this step if you prefer soft vegetables; I like them crisp so I wait a while to add them.

  4. Stir fry until vegetables are done and pork is cooked through.

  5. Serve over rice.
