Recipe Ingredients for sweet & sour meatballs

1 lb of lean ground turkey
1 cup cooked brown rice
1 cup crushed pineapple in juice, drained
1/2 cup green onions
1 tbsp soy sauce
1 tsp ginger
3/4 cup chicken broth
1/3 cup chili sauce
3 tbsp chili sauce
2 tbsp brown sugar
2 tsp cornstarch
1/2 tsp ground ginger

Recipe Directions for sweet & sour meatballs

  1. Preheat oven to 350F

  2. Meatballs:

  3. Combine turkey, brown rice, pineapple, green onions, soy sauce and ginger in medium bowl and mix thoroughly.

  4. Line cooking racks with foil. Shape meatballs and cook for 25 minutes or until thoroughly cooked. Transfer meatballs to a serving dish and cover to keep warm.

  5. Sauce:

  6. Combine chicken broth, chili sauce, rice vinegar, brown sugar, cornstarch and ginger in small saucepan and stir until cornstarch is dissolved. Place over med heat and stir intermittently until mixture comes to a boil. Reduce heat to low, and stir for another minute or until mixture thickens slightly. Pour sauce over meatballs and gently toss to coat.
