This version does not use breading on the chicken and has lots of veggies.

Recipe Ingredients for Sweet and Sour Chicken

8 ounces pineapple chunks, 1 can drained with juice reserved
1 cup carrots, sliced
1 small onion, cut into eighths
1 cup broccoli florets
2 green bell pepper, cut into 1 inch pieces
1 clove garlic, minced
1/2 tsp ground ginger
1/4 cup cornstarch
1 3/4 cups water
3/4 cup white sugar
1/2 cup distilled white vinegar
800 g Boneless Skinless Breast Fillets

Recipe Directions for Sweet and Sour Chicken

  1. Cut chicken into bite size pieces and season with the ground ginger. Heat a skillet to medium heat, add 2 tbsp vegetable oil and cook chicken until browned. Remove from pan.

  2. In a sauce pan, combine the pineapple juice, 1 1/2 cup water, and vinegar and bring to a boil, add the sugar and stir until dissolved, add a few drops of red or orange food coloring, if desired . Combine the remaining 1/4 cup of (cold)water with the cornstarch and slowly add to the sauce pan, while stirring, until thickened. Remove from heat.

  3. Add 1 tbsp vegetable oil to the skillet, add carrots, onions, broccoli, and green peppers and saute until the onions begin to caramelize. Add the garlic and chicken, stir until garlic is fragrant. Stir in the sauce and heat through.
