This is one of my favorite recipes from the LA Weight Loss Centers cookbook, "Cooking Light Naturally". The original recipe calls for Sugar Twin brown sugar and Herbox very low sodium chicken broth.

Recipe Ingredients for Sweet & Sour Chicken with Pineapple

8 oz. chicken breast, boneless/skinless
5 green onions, thinly sliced
1/2 medium green pepper, diced
2 tbsp. red wine vinegar
1 tbsp. corn starch
3/4 cup fresh pineapple, diced
6 tsp. brown sugar
2 tbsp. ketchup
1 tomato, diced
1/2 cup College Inn Light & Fat Free Chicken Broth

Recipe Directions for Sweet & Sour Chicken with Pineapple

  1. Cut chicken into strips or 1-inch squares.

  2. Spray skillet or wok with Pam. Add onion and green pepper and stir-fry over medium heat until vegetables are crisp-tender. Remove and set aside.

  3. Spray skillet or wok with more Pam. Add chicken pieces and stir-fry over medium heat until chicken is no longer pink.

  4. Mix vinegar, corn starch, chicken broth, brown sugar, and ketchup together. Add to skillet or wok. Cook, stirring constantly until sauce thickens.

  5. Return onion and green pepper to skillet or wok. Stir in pineapple chunks. Cover and cook for 2 minutes or until heated through. Stir in tomato.
