A simple version of sweet and sour chicken minus the peppers since I do not like them but you can add them if you like. This serves one person and has 361 calories 8grams fat and 1.5 grams saturated.

Recipe Ingredients for Sweet and Sour Chicken - Healthy

3 oz chicken breast, fried
1 tsp extra virgin olive oil
1/2 tbs all purpose flour
4 tbs sweet and sour sauce
1 large carrot
1 slice large onion
2 slice pineapple
1 tbs soy sauce low sodium

Recipe Directions for Sweet and Sour Chicken - Healthy

  1. Heat oil in a non-stick skillet.

  2. Wash and cut chicken breast into bite size pieces. Take a plastic sandwich bag and put 1/2 the tablespoon of flour into the bag with the chicken bites. Cover chicken breasts with flour then pour the 1 tablespoon of soy sauce into a small bowl. Put the flour covered chicken into the soy sauce and mix.

  3. When the skillet in the oil is hot add the chicken and remaining soy sauce. Stir it around a little followed by 1/4 cup of water. Cover and little simmer for about five minutes, then re-open and stir again, and cover for another 2-3 minutes.

  4. In the mean time while it first simmers, peel a carrot and cut it diagonally into tiny strips. Take two pineapple rings and cut them into small pieces and chop a thick slice of onions.

  5. After the chickens have simmered add the carrots, onions and 4 tablespoons of sweet and sour sauce. This would also be a good time to add in the peppers if you like them. Let this simmer covered for another 5 minutes.

  6. Add pineapples and stir in and let this cook covered for a few more minutes.

  7. Eat.
