Sweet and Sour Beef Stir Fry Recipe

Who needs take-out? The key to Chinese cooking is having your prep work done ahead of time.

Recipe Ingredients for sweet and sour beef stir fry

2 pounds skirt steak
2 pounds Broccoli Stir Fry
175 ml tamarind juice (1/2 can)
1 tbs brown sugar
1/2 cup soy sauce
1 tbs fish sauce
1 tsp red pepper flake
1 tbs chopped garlic
1 tbs grated ginger
2 tbs oil

Recipe Directions for sweet and sour beef stir fry

  1. Place meat in the freezer for 15 minutes to make slicing easier.

  2. In a resealable plastic bag combine all the ingredients except the meat, veggies and oil.

  3. Mix and taste the marinade. If you'd like it sweeter;more sugar. If you want more tang; more tamarind. Saltier-soy sauce so on and so forth. Just remember to go easy on the fish sauce. It is very strong and the marinade is going to be cooked and reduced later which means the flavors will be stronger.

  4. Remove meat from the freezer and place into the marinade.

  5. Marinate for at least 30 minutes up to 8 hours.

  6. Meanwhile, prep your veggies: for frozen, thaw in a colander under running water and drain. For fresh, slice or julienne veggies so that they are all roughly the same thickness. Broccoli florets can either be left whole or cut in half depending on the size.

  7. When meat has marinated the desired amount of time begin preheating your wok or large skillet over medium-high heat with the oil.

  8. Remove the meat from the marinade and RESERVE THE MARINADE!!!!

  9. Depending on the size of your wok or skillet, you may want to cook the meat in 2 batches.

  10. Once the pan is "rocket" hot, meaning the oil has begun to shimmer and smoke a little bit. ADD THE MEAT AND STIR TO SEPARATE THE MEAT.

  11. As soon as the meat becomes brown and not red REMOVE IT TO A LARGE PLATE IMMEDIATELY!!!

  12. When all the meat has been browned saute the veggies until tender crisp. Meaning cooked but still having a crisp bite to them.

  13. When the veggies are done transfer them to the same plate as the meat.

  14. Pour marinade into the wok or skillet and bring to a boil.

  15. You may add some water or low sodium chicken broth if you want to make more sauce than there is marinade.

  16. Once that boils, mix together 1 tbs cornstarch and 1/4 cup water and add to the sauce to thicken it.

  17. Simmer to reduce to desired consistency and add the vegges and meat back into the pan.

  18. Toss to combine and serve of rice if desired.
