Crushed Fennel seed gives this oriental style soup a slight sweet flavor. It is a flavorful, hearty, low calorie, low fat meal in a bowl. Use whole grain brown rice fettucini noodles over a wheat based noodle for added nutrition and a gluten free noodle soup. Low Sodium Vegetable broth should be used over regular.

Recipe Ingredients for Sweet Shrimp Noodle Soup

16 oz shrimp, shelled and cleaned
1 red onion, diced
4 carrots, diced
2 cups celery, diced
8 oz mushrooms, sliced
8 cups spinach leaves, fresh
1 tbsp fennel seeds, crushed
1 tbsp garlic, minced
4 cups vegetable broth, low sodium
1 tsp fish sauce
1 tbsp sesame oil
6 oz dry organic brown rice pasta, fettucini or spaghetti
4 tbsp green onion, chopped (optional garnish)

Recipe Directions for Sweet Shrimp Noodle Soup

  1. Saute the onions, carrot, celery and mushrooms in sesame oil until onions are tender and mushrooms start to brown. Add fennel seed, garlic and fish sauce and stir until the spices begin to release their flavors. Add broth and simmer until vegetables are tender and flavors have melded. Stir in the raw shrimp and the spinach leaves and cook just until shrimp turns pink and spinach has wilted.

  2. Serve in large deep soup bowls. Chopped green onion makes a nice garnish on top.
