Recipe Ingredients for Sweet and savory warm spinach salad

4 cups Spinach
0.5 medium (2" dia, 5" long, raw) Sweetpotato
0.13 cup Crumbled Blue Cheese
0.13 cup Chopped Walnuts
5 half Apricots, Dried, Sulfured, Uncooked

Recipe Directions for Sweet and savory warm spinach salad

  1. 1. Microwave one sweet potato in the skin (poke some holes with a fork first) - about 3 minutes for a very small one, longer for larger potatoes. You can do this ahead and keep it in the fridge. Otherwise, slice in half so it starts to cool as you do the next steps. Dice 1/2 (or more) of the sweet potato and save the rest.

  2. 2.Sautee the spinach in fat-free cooking spray. It cooks way down so you can add a little at a time if there's not room in the pan at first.

  3. 3. chop walnuts (about 2 tbsp worth) if not already chopped, and dice 5 dried apricot pieces.

  4. 4. Top the warm spinach with diced sweet potato, dried apricots, chopped walnuts and 1-2 tbsp crumbled blue cheese.
