Recipe Ingredients for Sweet-Savory Honey Shrimp over Angel Hair Pasta

1 lb large shrimp
2 leeks
3 cup kale
1 sweet red pepper
1 sweet yellow pepper
3 T honey
1/4 cup balsamic vinegar
4 ounces chopped tomatoes
1/2 cup fresh basil
1/2 lb angel hair pasta

Recipe Directions for Sweet-Savory Honey Shrimp over Angel Hair Pasta

  1. wash leeks then chop

  2. coarsley chop kale

  3. slice peppers to desired sizes ( I like chunks)

  4. chop 2 medium tomatoes or use 1 can dices tomatoes

  5. 1/2 to 3/4 cup of basil (I like big pieces)

  6. HONEY

  7. WHITE Balsamic Vinegar ( I use a speciality vinegar of Pear & Balsamic but you could use WHITE Balsamic)

  8. 1/2 box pasta

  9. 1 lb RAW large shrimp peeled, deveined, tails removed. Wash, use a paper towel to driy.

  10. Get water ready for pasta and cook accordingly because this dish only takes less than 10 minutes to cook.

  11. Use Veggie Spray in non stick pan or you can also use a small amount of olive oil (add those calories to this dish then).

  12. Get your pan hot , add the leeks & sautee for about 2 minutes, add kale & sautee for 1 minute then add peppers & continue to cook between 3 & 5 minutes.

  13. BEFORE you add the shrimp..push all the veggis to one side of the pan. ADD the honey and vinegar and stir on that side of the pan. ADD raw shrimp and cook till pink.

  14. Mix all the food together, put the lid on, remove from heat and get your pasta in your bowls or on your plates. Spoon Shrimp/veggie mixtue over pasta and top with FRESH BASIL.

  15. OPTIONAL..sprinkle some grated parm
