Refreshing spring time salad hearty enough to be a main dish for 2 or a side for 4 to 6.

Recipe Ingredients for Sweet and Savory Cucumber Salad

4 cup slices(52 g) Cucumber
0.5 medium raw(119 g) Bell Pepper Red
0.5 cup Peanuts, All Types, Dry-roasted
0.33 cup Coconut Flakes
2 dates(40 g) Dates, Medjool
1 lemon yields Lemon Juice
0.3 tablespoons Chia Seed
1/4 tsp Cumin
0.5 grams Sea Salt
3 grams Cilantro

Recipe Directions for Sweet and Savory Cucumber Salad

  1. Dice the cucumber and the red or yellow bell pepper just slightly bigger than a pencil eraser.

  2. Use English or Armenian cucumber and leave the skin and seeds in. If you use regular cucumber partially peel and scoop out seeds. You need 4 cups of cucumber once it is diced up and 1/2 of a large bell pepper.

  3. Place raw Spanish peanuts and raw coconut flakes on a cookie sheet spread out. Toast in oven at 400 degrees until coconut is lightly browned. Remove and cool.

  4. Mix together the juice of one lemon, finely chopped dates, chis seeds, cumin, and sea salt in a mason jar shaking to blend. Let set to develop flavors.

  5. Just before serving add finely chopped cilantro, the coconut, peanuts and lemon juice dressing to the cucumber, bell pepper mix and toss in salad bowl. Toss until everything is mixed.

  6. Do not mix the components ahead of time or the cucumber will bleed off its water and the peanuts will get soggy.
