Baked in a fluted tube pan, this turns out more like cake than bread. I found this at the following Website: http://southernfood.about.com/od/pumpkinbreadrecipes/r/bl50417m.htm

Recipe Ingredients for Sweet Pumpkin Bread

3 cups flour (sifted)
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground nutmeg
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
3 cups granulated sugar
1 cup vegetable oil
3 eggs
16 ounces pumpkin
1 cup chopped pecans

Recipe Directions for Sweet Pumpkin Bread

  1. Grease and flour a 10-inch fluted tube pan.

  2. In a bowl, sift together the flour, baking powder and soda, spices, and salt.

  3. In a large mixing bowl, combine sugar, oil, and eggs; stir until well blended.

  4. Stir pumpkin into the egg mixture.

  5. Gradually add sifted dry ingredients to the pumpkin and egg mixture, stirring well after each addition.

  6. Fold in pecans.

  7. Spoon batter into prepared tube pan.

  8. Bake in a preheated 350 oven for about 1 hour and 15 to 20 minutes, or until a wooden pick or cake tester inserted in center comes out clean.

  9. Remove from oven and cool on a rack for 10 minutes before removing from pan. Cool completely on rack before slicing.
