Recipe Ingredients for Sweet Potato's and Spinach Frittattas

250 grams Spinach
4 medium Sweetpotato
3/4 cup, mashed Squash, Summer, Zucchini, Includes Skin
1 cup Peas, Green
4 ounces Organic Polenta
1 medium Egg, Whole
2 tbsp Olive Oil, Extra Virgin
1 medium (2-1/2" dia) Onions
2 clove Garlic

Recipe Directions for Sweet Potato's and Spinach Frittattas

  1. boil veg

  2. mash

  3. squeeze out excess liquid

  4. mix in onion and garlic

  5. mix in polenta

  6. mix in egg

  7. shape in patties and lightly coat in flour

  8. shallow fry in hot pan, few minutes on each side

  9. pat off oil

  10. serve
