Recipe Ingredients for Sweet potatoe skins

2 pounds sweet potatoes
1 teaspoon olive oil
1 onion,(small diced)
1 clove garlic, (diced)
10 ounce spinach, (fresh)
2 scallions, (thinly sliced)
2 slices turkey bacon (cooked and crumbled)
4 ounces low fat cream cheese
1/4 cup low fat buttermilk
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon oil, vegetable
2 tablespoons parmesan cheese

Recipe Directions for Sweet potatoe skins

  1. preheat oven to 350

  2. place potatoes on baking sheet and onto oven rack , bake 45 minutes

  3. while potatoes are baking, saute olive oil and cook onion for 2-3 minutes till soft. add garlic and cook 1 more minute, add entire bag of spinach and scallions, cover and cook 3-4 minutes, till spinach is wilted.

  4. cook turkey bacon till crisp and crumble (to top potatoes)

  5. when potatoes are don cool 5 mintes carefull slice each one in half and scoop out inside of potatoe into a bowl. add cream chees, buttermilk, sald and pepper and mash together till smooth.

  6. using a pastry brush coat the outside of each skin with the vegtablel oil. fill each of shells wiht the filing and top with a spinkle of parm. cheese. place back on baking sheet and cook for 15 to 20 minutes more or until top is golden brown and skins are crispy, top with bacon bits.
