Sweet potatoe and bell pepper salad dressed in lowfat yogurt, whole grain mustard and roasted sesame seeds

Recipe Ingredients for Sweet Potatoe Salad

500 g sweet potatoes
31 g Peppers, Sweet, Green
31 g peppers, sweet yellow
200 g yogurt, plain, lowfat
1 tsp whole grain mustard
2 tsp roasted sesame seeds
1 small onion, red, thinly sliced

Recipe Directions for Sweet Potatoe Salad

  1. Grill or boil sweet potatoes and sweet peppers, then leave to cool.

  2. Mix mustard and yogurt together.

  3. Toss thinly sliced red onion, sweet potatoes and peppers together in yogurt mixture.

  4. Finaly sprinkle salad with roasted sesame seeds.
